Bean Pita Pizza

Serves 4


  1. Rinse, drain and mash pinto beans.
  2. Spread 2 tablespoons of tomato sauce on each pita bread.
  3. Top each pita with 1/4 cup mashed beans. Sprinkle on cumin and oregano and cheese.
  4. Microwave for 45 to 60 seconds, or longer if needed, until cheese is melted and beans are hot.

Optional: Add chopped onion, green pepper, corn, tomatoes, or other vegetable
