Black Bean Brownies

Serves 24

Directions:

  1. Preheat oven to 350˚.
  2. Spray 9 x 13 pan with canola cooking spray.
  3. Rinse and drain black bean then set aside.
  4. Microwave the chocolate and butter in a small bowl until smooth, approx. one minute.
  5. In a large bowl, blend bean puree and one egg until smooth. Combine flour, sugar, instant coffee and egg whites. Beat well with electric mixer.
  6. Add melted chocolate. Pour into prepared pan.
  7. Bake for 45 minutes, until brownie pulls away from sides of pan and a toothpick inserted into center comes out nearly clean. Cool completely before cutting.

Optional: Sprinkle walnuts on top of brownie batter before baking.
